Although I only recently learned of this fab establishment, I was sold before I even had the opportunity to taste their food. The atmosphere grabbed my attention as soon as I stepped over the threshold.
True Food Kitchen – Boca is well lit, has tons of elbow room, a chic and retro decor, the staff is SUPER friendly and it feels ALL inclusive. What do I mean by all inclusive??? Well, because I have dietary restrictions, there are times when I feel like an after thought while browsing the menus of certain restaurants. For example, they might only have a garden salad with very limited dressing options available for someone such as myself. However, I don’t have to worry about the non-dairy, no-soy thing when dining at TFK. The restaurant has something to accommodate everyone.
I am allergic to both soy and dairy, so when I eat either of them my face breaks out really bad, and I feel tired and bloated. Since excluding these two items from my diet, my skin is a lot better and after I eat I don’t feel weighed down. That is why True Food Kitchen is one of my GO-TO’s from this moment forward. It is SUPER healthy, and SUPER delicious!!!
While there Sassy Gals Talk Shop had the pleasure of meeting/interviewing Dr. Andrew Weil, Co-Founder and Christine Barone, Chief Executive Officer of the establishment.
Keep reading for a little TFK insider…
Sassy Gals Talk Shop: What is integrative medicine?
Andrew Weil, M.D. : It is healing-oriented medicine that takes account of the whole person.
Sassy Gals Talk Shop: Nice!
SGTS: What inspired you to co-found True Food Kitchen?
Dr. AW: I am a great home cook, and although I knew nothing about the restaurant business, I decided that I wanted to open a restaurant that focuses on healthy eating and living. After reaching out to a colleague (Sam Fox, Founder), we came together, and in 2008 we opened the first True Food Kitchen in Phoenix, AZ, and it was an immediate success.
SGTS: How and when do you start planning the next seasons menu?
Dr. AW: Usually five months in advance and we are always on the look out for local growers. and new ideas.
SGTS: Oh, so you actually work with local growers in the area?
Dr. AW: Yes, we do.
SGTS: That is really great!
Hint….Hint! If there are any local growers out there in South Florida land, checkout True Food Kitchen and let them know you are interested in partnering. You never know where it will lead!
SGTS: What is your favorite item on the Winter Menu?
Dr. AW: The Ancient Grains Salad
Christine Barone: The Kale Salad. Believe it or not, kids love it!
Christine Barone: Yes!
SGTS: That’s impressive!
SGTS: Can you give us a little teaser for the Spring menu?
Christine Barone: Yes, there may be a new Spring Beverage coming soon.
SGTS: Ooouuuu…can’t wait!
